At Mullixhiu, the result of this project was a cozy mountain cabin restaurant offering small plates. For just $15, the tasting menu featured curd and candied meat pie to chewy-crisp sweetbreads with melancholic rose gliko that offered the melancholy taste of faded memories – much like Proust’s Madeleine. Grains were an especially big focus here; the team used an open plan prep mill to grind its own flour before hand-making sausages, pasta and cheeses by hand – as well as qumeshtor which could easily have been seen as just another dessert but was truly memorable during our meal!
