Kadeau Bornholm
Kadeau Bornholm Restaurant was opened by Nicolai Norregaard and childhood friends on the Danish Island of Bornholm in 2007 to take advantage of Bornholm’s terroir: its terrain, soil composition and microclimates that provide for an exceptional dining experience.
Norregaard and his team are passionate about Bornholm’s rich flora and fauna, cultivating herbs, vegetables, berries and honey in their greenhouse for use at their restaurant year round. Whatever doesn’t get used immediately is preserved so guests can experience its nature year-round!
Norregaard has taken to heart the New Nordic movement, helping it gain prominence in Copenhagen through Kadeau and casual bistro Pony. Additionally, he maintains a summer restaurant on Bornholm Island.

Fyn. Aro

Restaurant Jatak
Food influencers frequently point to Copenhagen as an idealized example of restaurant culture, yet working conditions for those employed there remain far from desirable. Even Noma — considered one of the world’s finest eateries — has accepted hundreds of unpaid interns as stagiaires over time.
Now, a new place is seeking to change that. Restaurant Jatak opened its doors in January 2022 and recently earned their inaugural Michelin star. Chef Jonathan Tam and co-owner Frilund are former Noma interns whose cuisine draws upon local ingredients and cultural heritage; additionally they use their kitchen as a classroom offering training to front-of-house staff as well as providing authentic Montenegrin dishes in a cozy mountain environment.
